Matcha green tea, also known as powdered green tea, holds a unique spiritual significance in Japan, where it is traditionally used in the Japanese Tea Ceremony, Chanoyu. It is said that during the Chanoyu ritual, the five senses of a participant come alive to their fullest potential.
Integral to Japan's traditional art of tea ceremony, Matcha is believed to foster mental concentration, emotional stability, and composure of the mind in each cup. To achieve the full-bodied flavor, the tea plants are covered with bamboo mats during the final weeks of their growing season. After the leaves are plucked, they undergo immediate steaming to spread the chlorophyll and prevent oxidation. The leaves are then dried and rapidly cooled, resulting in a product known as rough tea or Aracha.
The Aracha is meticulously processed further by cutting it into small pieces and removing the twigs, veins, and stems. The refined leaves are dried once more, producing the Tencha. Finally, the Tencha is ground into a fine powder using stone mills in a climate-controlled, clean room, yielding the Matcha. This meticulous process is labor-intensive, with a single mill capable of processing only 40 grams of leaves per hour.
The resulting Matcha possesses a sweet, buttery, and rich oceanic taste. It is traditionally prepared with a bamboo whisk in a bowl, but can also be enjoyed in a variety of drinks, shakes, and smoothies.
